VEGAN / GF / NO REFINED SUGAR ALMOND CAKE

*please note: I am no chef, it is all for fun—take it with a pinch of salt <3

not a very sweet cake, perfect to pair with sweet drink or people who do not have a sweet tooth


1.5C almond flour

1.5tbsp flaxmeal

1.5tspn baking powder

1/4C corn flour

6tbsp almond milk (room temp)

8tspn coconut oil (melted)

8tspn maple syrup

1tspn vanilla extract

flakey almonds


  1. preheat oven 180ºC & grease your tin/moulds (I used vegan butter)

  2. whisk dry:

    1.5C almond flour

    1.5tbsp flaxmeal

    1.5tspn baking powder

    1/4C corn flour

  3. combine wet:

    6tbspn almond milk (room temp)

    8tspn coconut oil (melted)

    8tspn maple syrup

    1tspn vanilla extract

  4. mix dry & wet with spatula

  5. pour into tin & top with flakey almonds

  6. bake for 33mins~ (depends on your oven) & rest till cool before popping tin open
